Made exclusively with Sicilian durum wheat semolina from Lenato’s own cultivation, the dough is drawn through bronze molds according to ancient tradition. Then the pasta is slowly dried for between 15 and 28 hours. These processes make the surface of the pasta rougher and the flavor of the sauce is better absorbed during preparation.
