Guanciale bacon (bacon from black pigs) is a very aromatic bacon from Sicily. This is the traditional ingredient for spaghetti alla carbonara.
Suino Nero – black pig. It is named after the color of its fur, which makes it much more similar to wild boar than to farm pigs. It is a very rustic breed that is reared in the wild. The animals feed on field beans, carob and acorns. and cereals, which is reflected in the sweet but very strong meat flavor. The Guanciale bacon is unsmoked and air-dried.
