Pasta Callari is produced in the rolling hills of southeastern Sicily, in Niscemi. This fertile region is famous for the cultivation of “Grani di Sicilia”, the main ingredient of our products.
Local tradition and attachment to the land are at the heart of the PASTA CALLARI project. The young founder, Francesco Callari, aims to offer his customers a traceable, healthy and 100% Sicilian product.
As pastificio and farmer we have a common goal: to offer an excellent Sicilian product. Durum wheat semolina and water are the only ingredients of pasta Callari. The pasta is made according to a simple recipe, just as tradition dictates. The ground wheat is processed into pasta within 24 hours. This ensures the traceability of production and offers the consumer a high quality pasta.
The scent of wheat when you open a packet of pasta Callari is the result of the use of the best Sicilian durum wheat, the slow extrusion process, the bronze drawing technique and the long drying times. These ingredients transform Pasta Callari from a simple pasta into a true pleasure experience.
